Ingredients
  

  • 1 cup cottage cheese preferably 2% fat
  • 2 tablespoons cocoa powder unsweetened
  • 2 tablespoons maple syrup or preferred liquid sweetener
  • 1/4 teaspoon vanilla extract optional
  • 2 teaspoons chia seeds optional, for added thickness

Instructions
 

  • Add the cottage cheese, cocoa powder, maple syrup, vanilla extract, and chia seeds (if using) to a blender or food processor.
  • Blend on high speed until the mixture is completely smooth, scraping down the sides as needed. This should take about 30-45 seconds.
  • Transfer the mousse into serving dishes or a large bowl, cover, and refrigerate for at least 30 minutes to allow it to thicken and the flavors to meld.
  • Before serving, give the mousse a good stir. Optionally, top with whipped cream, fresh berries, or a sprinkle of chocolate shavings.

Notes

This mousse can be stored in the refrigerator for up to 4 days. Feel free to adjust the sweetness to your preference by adding more or less maple syrup. For a smoother texture, ensure the cottage cheese is well blended.
